This Smoked Brisket Burgers recipe delivers the low and slow BBQ flavour you crave in some seriously tasty burgers. They’re smoked over cherry and mesquite wood, then seared with a barbecue sauce baste. Top them with smoked bacon, red onions and barbecue sauce and you will have a truly epic taste sensation.

We made this recipe on the Longhorn Combo, but you can make it on your smoker and grill.

Ingredients

Burger

2½ pounds ground brisket
6 strips bacon
6 slices Cheddar cheese
1 red onion, sliced
3 pickles, sliced lengthwise
⅔ cup barbecue sauce
6 burger buns
salt and pepper to taste
cherry & mesquite wood chunks

Preparation

  1. Preheat smoker to 225°F and toss a couple wood chunks on top of hot coals.
  2. Form ground brisket into 6 equal-sized patties and season simply with salt and pepper.
  3. Place bacon and burgers onto hot grates. Cook until internal temperature reaches 115°F, about 30 to 45 minutes.
  4. Preheat grill to 500°F.
  5. Remove bacon from the smoker and set aside.
  6. When burgers reach the targeted temperature, brush them with barbecue sauce and transfer to gas grill grates. Sear for 1-2 minutes per side, brushing both sides with barbecue sauce.
  7. Place a slice of cheese on top of each burger until melted, about 30 seconds.
  8. Grill buns, cut side down, for 15 seconds.
  9. Assemble burgers onto buns and top with smoked bacon, red onions, sliced pickles and barbecue sauce.
